Asparagus-Potato Hash with Goat Cheese and Eggs
Crispy potatoes sautéed with tender asparagus and topped with perfectly cooked eggs. A hearty, wholesome hash that’s simple, satisfying, and perfect any time of day.

[Marinate and grill the chicken]
Place one chicken breast in a resealable bag or between two sheets of parchment paper and pound to an even thickness. Repeat with the rest.
Whisk together the marinade, pour over the chicken, and turn to coat. Marinate for 30 to 60 minutes.
Preheat the grill to medium and cook the chicken about 12 minutes total, flipping once, until cooked through. Rest a few minutes before slicing.
[Prep the toppings]
Wash and chop the lettuce. Cook the bacon until crisp, let cool, then chop. Boil the eggs to your liking and cut into halves or quarters.
[Make the dressing]
Blend all the dressing ingredients with an immersion blender, or mash the garlic and mince the anchovies by hand and whisk together in a bowl. Season with salt and pepper. Keeps covered in the fridge up to 5 days.
[Assemble]
Divide the lettuce among four bowls. Top with nutritional yeast, dressing, chicken, egg, and bacon. Finish with cracked black pepper and serve.
