Asparagus-Potato Hash with Goat Cheese and Eggs
Crispy potatoes sautéed with tender asparagus and topped with perfectly cooked eggs. A hearty, wholesome hash that’s simple, satisfying, and perfect any time of day.
A colorful, nutrient-packed meal featuring savory chicken sausage, brussel sprouts, and butternut squash. Finished with pancetta and pine nuts and baked to perfection on a single sheet pan for an easy, flavorful dinner with minimal cleanup!

Preheat the oven to 425°F. Line a large baking sheet with parchment paper or foil.
Place the trimmed Brussels sprouts and cubed butternut squash on the sheet pan. Drizzle with the olive oil and maple syrup, and season with the fresh herbs, 1 teaspoon salt, and pepper. Toss with your hands to coat, then spread in an even layer. Add the sliced chicken sausage and cubed pancetta to the pan, arranging everything in as even a layer as possible — use a second sheet pan if it's getting crowded.
Roast for 25 minutes, flipping everything halfway through. With about 5 minutes left, scatter the pine nuts over the pan to toast as everything finishes.
Finish with a sprinkle of shaved parmesan and a drizzle of balsamic glaze. Serve right away with a green salad or grains of your choice. Enjoy!
