Asparagus-Potato Hash with Goat Cheese and Eggs
Crispy potatoes sautéed with tender asparagus and topped with perfectly cooked eggs. A hearty, wholesome hash that’s simple, satisfying, and perfect any time of day.

Make the dressing: blend all the dressing ingredients together (a regular or immersion blender both work) until smooth. Refrigerate until ready to use.
Marinate the shrimp in the first seven ingredients for about 5 minutes. Heat a sauté pan over medium-high with a light spray of canola oil. Lift the shrimp out of the marinade, reserving the liquid, and add to the hot pan. Once the shrimp start to turn pink on both sides, add the reserved marinade and let it reduce until the sugar caramelizes into a sauce. Toss with chopped cilantro and set aside.
To assemble bowls: start with a base of cauliflower rice, top with romaine and the shrimp, then add black beans, corn, tomatoes, shredded cheese, avocado, cilantro, and salsa. Drizzle with the dressing and serve.
To meal prep: layer the cauliflower rice, corn, beans, shrimp, romaine, and tomatoes in a glass container, with cheese and cilantro on top. Pack the dressing on the side and add avocado just before eating.
