Chipotle Southwest Turkey Burgers

Instructions

  1. Make the chipotle yogurt sauce: chop 3 chipotle chilies from a can of chipotles in adobo. Combine them with 1 tablespoon of the adobo sauce and the rest of the sauce ingredients in a bowl. Cover and refrigerate until ready to use.

  2. Make the burgers: heat the olive oil in a medium skillet over medium heat and add the chopped onion. Sauté for 5 to 8 minutes, until softened and fragrant. Add the jalapeño, garlic, salt, and cumin, and cook 3 to 5 more minutes. Set aside to cool to room temperature.

  3. In a large bowl, combine the ground turkey, corn, and black beans. Once the sautéed mixture has cooled, mix it in by hand. Shape into 3 patties.

  4. Heat 2 tablespoons of oil in a cast-iron or regular skillet over medium-high heat. Cook the patties until firm on the bottom, 5 to 8 minutes, then flip and cook until firm throughout and cooked to at least 165°F internally.

  5. Toast the buns under the broiler. Spread mashed avocado over each bun, top with a patty, chipotle yogurt sauce, tomato, red onion, and lettuce, and serve.
