Asparagus-Potato Hash with Goat Cheese and Eggs
Crispy potatoes sautéed with tender asparagus and topped with perfectly cooked eggs. A hearty, wholesome hash that’s simple, satisfying, and perfect any time of day.

[Chicken Skewers w/ Feta Cream Sauce]
Combine 3 tablespoons olive oil, the paprika, cumin, cayenne, cinnamon, 3 cloves of garlic, ginger, cilantro, parsley, and a pinch each of chili flakes and salt in a bowl. Add the chicken and toss to coat. Marinate for 15 minutes, up to overnight in the fridge.
Make the vinaigrette: combine 1/4 cup olive oil, lemon juice, red wine vinegar, honey, sun-dried tomatoes, 1 clove of garlic, and a pinch each of chili flakes, salt, and pepper in a jar.
Make the feta sauce: blend the feta, yogurt, and lemon juice until creamy, then stir in the herbs, paprika, and a pinch of red pepper flakes.
Heat a grill, grill pan, or skillet to medium-high. Thread the chicken, artichokes, and asparagus onto skewers. Grill, turning occasionally, for 10 to 12 minutes total, until lightly charred and cooked through (or roast at 400°F for 20 to 30 minutes instead).
Serve the chicken with the vinaigrette and feta sauce spooned over top, finished with fresh herbs, alongside naan and extra feta.
[Tomato, Cucumber, Feta Salad]
Dice the cucumber, chop the tomatoes, dice the feta, and chop the parsley.
Combine everything in a bowl with the olive oil, vinegar, garlic, oregano, salt, and pepper. Keeps in the fridge up to 5 days.
