Asparagus-Potato Hash with Goat Cheese and Eggs
Crispy potatoes sautéed with tender asparagus and topped with perfectly cooked eggs. A hearty, wholesome hash that’s simple, satisfying, and perfect any time of day.

Preheat the oven to 425°F. Peel and dice the sweet potatoes.
Line a sheet pan with foil or parchment and coat with olive oil spray.
Combine the spice mixture ingredients. Toss the sweet potatoes with olive oil and 1 tablespoon of the spice mixture (reserving the rest for the chicken), then spread on the sheet pan.
Spray with a bit more olive oil and roast for 15 minutes.
While the potatoes roast, dice the red onion, trim the broccolini, and cut the chicken into 8 pieces. Massage the remaining spice rub into the chicken.
Remove the pan and push the sweet potatoes to one side. Add the onion, broccolini, and seasoned chicken to the pan, spray everything with olive oil, and add a pinch of salt to the broccolini and onion.
Roast 15 more minutes.
Combine the BBQ sauce and honey. Remove the pan, brush the mixture onto the chicken, toss the vegetables, and roast 10 more minutes.
