Asparagus-Potato Hash with Goat Cheese and Eggs
Crispy potatoes sautéed with tender asparagus and topped with perfectly cooked eggs. A hearty, wholesome hash that’s simple, satisfying, and perfect any time of day.

Preheat the oven to 400°F.
Whisk together the honey, orange juice, orange zest, 1 tablespoon olive oil, ginger, garlic, red pepper, salt, and pepper. Place the chicken in a bowl or resealable bag, pour the marinade over, and toss to coat.
Cut the broccoli into florets and toss with 2 tablespoons olive oil, a dash of salt, 1/2 teaspoon garlic powder, and pepper. Arrange along the edges of a parchment-lined sheet pan.
Add the chicken to the center of the pan and pour the remaining marinade over top.
Bake for 15 to 20 minutes, until the chicken reaches 165°F. Blot away any extra liquid before serving.
Serve with rice, with an extra drizzle of honey and a garnish of red pepper if you like.
