Asparagus-Potato Hash with Goat Cheese and Eggs
Crispy potatoes sautéed with tender asparagus and topped with perfectly cooked eggs. A hearty, wholesome hash that’s simple, satisfying, and perfect any time of day.

Pound the chicken breasts to an even 1/2-inch thickness between two pieces of parchment or wax paper, then cut into 1.5-inch chunks.
Whisk together the soy sauce, brown sugar, lime zest, vegetable oil, garlic, curry powder, ginger, cardamom, and salt in a bowl. Add the chicken, toss to coat, cover, and refrigerate at least 4 hours, up to overnight.
Make the peanut sauce: whisk the coconut milk, peanut butter, brown sugar, soy sauce, and curry paste together in a saucepan. Bring to a simmer and cook, stirring occasionally, about 3 minutes. Stir in the lime juice.
If using wooden skewers, soak them in water for 30 minutes. Thread the marinated chicken onto the skewers.
Preheat the grill to high and oil the grates. Grill the skewers about 5 minutes per side (or up to 10 minutes total, turning once), until cooked through.
Serve warm with the peanut sauce and lime wedges.
